The Vision Behind Yamas
Yamas is the vision of Kosta, a man whose journey spans continents, cultures, and careers — all leading to one place: your table.
Born in Germany to Greek immigrant parents, Kosta grew up surrounded by the flavors and traditions of the Mediterranean. At just 17, he made the bold move to the United States, carrying with him a deep love for Greek culture and the belief that great food brings people together.
Driven by a sense of duty, Kosta enlisted in the U.S. military and served on active duty as an infantry soldier for 8 years, serving his adopted country with pride. After his service, he traded combat boots for Xtratuf boots on commercial fishing boats in Alaska. After years on the ocean, he became a law enforcement officer in western Alaska — where he met his wife, a Plymouth, NH native and third-year Dartmouth medical student on a rotation in the Alaskan frontier.
But through every chapter, one thing stayed constant: a passion for good food and good company. That passion first came to life in Walla Walla, Washington, where the original Yamas concept was born — and is still open and serving incredible food to this day. Plymouth refined the concept over the past four years, and Concord will mark the beginning of the next chapter: bringing great authentic food, exceptional service, and a true community gathering space to more cities soon.
From Germany to Greece, from the military to the Alaskan wilderness, every experience Kosta has had lives in the warmth of Yamas. Veteran owned and operated, built with heart, and rooted in tradition — this is Greek hospitality the way it's meant to be.
